Corn Salad with Cotija and Adobo Crema
This recipe is so easy and can be totally tailored to your own taste. Take the amounts given as suggestions only!
6 ears of corn, kernels cut from cob (raw or cooked)
2 chipotle peppers in adobo sauce (canned), coarsely chopped
2 tbsp adobo sauce from can
1/3 cup sour cream
2 tbsp Pronto! Salsa Starter
1/3 cup cilantro, coarsely chopped
3 oz cotija cheese
1/2 white onion, chopped
in a small bowl, combine sour cream, adobo sauce and Pronto! Salsa Starter.
In a larger bowl, add corn, onion, cilantro, sour cream mixture and chipotle peppers.
Crumble cotija cheese into bowl and stir gently to combine.
Garnish with additional cotija and cilantro.
Serve with lime wedges.
