Recipe: Grilled Okra

We LOVE this amazing, simple quick side dish! It's a great companion anytime you are throwing something on the grill for a no-fuss side that's done in minutes. We modify the seasoning depending on what we are serving it with. It's also really good with a creamy dip (a bright lemon & yogurt dip or a scoop of french onion dip work especially well.


We start with a good pour of EVOO in a small saucer, and mix in whatever seasoning blend the situation calls for (in this case, a spicy Cajun blend). Roll the okra through the mixture one at a time and then slide them onto a skewer. (If you are using bamboo or wood skewers, remember to soak them for 30 minutes first.)


That is seriously ALL the prep work needed. Preheat your grill (high heat) and throw your skewers on for about 5 minutes per side.


Grilled Okra

Ingredients:

  • Okra (5-8 per person, depending on size)

  • 1/4c extra virgin olive oil

  • 1 tsp seasoning of your choice (or more)

  • metal or soaked wooden skewers

Directions:

  1. Rinse okra and pat dry

  2. Preheat grill to high heat

  3. Combine olive oil and seasoning in a small plate or dish and adjust to taste

  4. Roll okra through oil mixture and then slide carefully onto skewer. You can use a single skewer through the middle of the okra (as shown), or can thread them on two skewers for easier turning and handling.

  5. Set skewers on paper towels and allow excess oil to drain.

  6. Grill over direct, high heat for 10 minutes, turning halfway through.
