This quick and easy weeknight go-to gets a great boost from a sweet, smoky, garlicky sauce. Pairs perfectly with our Corn Salad with Cotija and Adobo Crema! They both come together in about 30 minutes.
1 1/2 lbs turkey tenderloins
2 tbsp Chipotle Coffee Rub
3 tbsp honey
3 tbsp soy sauce
3 cloves chopped garlic
1 tsp olive oil
Preheat oven to 400 degrees. Place an oven-proof skillet inside to heat the pan.
Rinse and pat dry turkey tenderloins. Set aside.
In a small brown, combine honey, soy sauce, garlic and Chipotle Coffee Rub.
Drizzle mixture over both sides of tenderloins, coating completely, and let marinate while oven finishes preheating.
When oven is preheated, use gloves to carefully remove pan. Swirl olive oil into pan.
Shake excess marinade from tenderloins and quickly place in preheated pan.
Place pan back in oven for 10 minutes. Remove carefully and flip tenderloins. Return to oven for 10 more minutes or until thickest parts and center of tenderloins read at least 165 degrees.
