Easy, vibrant and elegant, this makes a great appetizer or side dish. And with a little planning, these few simple ingredients pack a flavorful punch!
1 lb fresh mozzarella
2 large beefsteak tomatoes
Royal Roost Farm Tuscan Table Blend
1 tsp. Balsamic vinegar (optional)
Fresh basil, coarsely chopped
Cut mozzarella into 1/4" slices (or as desired). Lay slices flat along bottom of a glass baking dish. Drizzle with olive oil and balsamic vinegar (if using). Sprinkle generously with Tuscan Table Blend and chill 2 hours or overnight. (You can skip this if you are in a hurry, but the flavor payoff is worth the wait.) When ready to prepare, slice the tomatoes into 1/4 slices. Discard tops and bottoms. Begin stack with a slice of tomato, a dash of Tuscan Table Blend, a slice of mozzarella, and a pinch of chopped basil, then a drizzle of the oil and vinegar from the mozzarella marinade. Repeat as desired, making 2 tall stacks (as shown) or 4 shorter stacks. Garnish with remaining basil and olive oil mixture, and a pinch more Tuscan Table Blend.
